There is a well-guarded secret in Moselle since 166 years : the conception of the macaroons of Boulay. A worldwide renown for this smooth and soft texture, this lightly sugared taste with a delicate almond perfume. The receipt was elaborated in 1854 by Mr and Ms. Lazard : a macaroon which became the emblem of the town, where no reception would take place without those delicious french delicacies. They are only made of fresh almonds, sugar and egg white, and manually prepared with a spoon.
The secret of the elaboration was passed from one generation to the next until 1963, when it was given to the Alexandre family. Today the macaroons are still made following the original receipt and know-how.
They are labelled “Entreprise du patrimoine vivant” and also “Moselle Quality”.
Remarked by all food critics searching for authentic and natural products, they are shipped worldwide, and especially in Japan.
